Edge, Steak & Bar

Just as Julia Child was able to paint a clear picture of French cuisine for American eyes (and palates), I believe that sometimes it takes an outsider to get a panoramic view of a city’s culinary landscape, and I strongly believe that Chef Aaron Brooks of Edge, Steak & Bar in the  Four Seasons Hote l has been able to capture the soul of Miami’s cuisine and turn out some of the most beautiful dishes I’ve sampled in South Florida.  I was surprised to learn from the restaurant staff that Chef Brooks was not a native of Miami, nor does he hail from Latin America.  He is a native of Australia, a country that, much like Miami, is comprised of a fairly recent mix of cultures that have all helped to shape the country’s identity and food habits.  It would
