GROCH: Roast your way to gourmet peppers
One of my resolutions this year is to try to share some ways to stretch those food dollars ---- and still have meals that taste and look good.
That thought came to mind recently when I picked up some beautiful red peppers on sale at three for $1. After a long season of passing up most peppers at what I considered a high price, these were a bargain. I snapped up three big red beauties right away.
Now, most of you are probably already slicing raw peppers into salads and sandwiches, cooking them with onions in omelets, etc.
What I want to tell you today, though, is how to roast them. A gourmet jar of roasted red peppers will go for $6 and up. But you can do this at home for pennies, especially when peppers are such a good price. (Note: They don't have to be red peppers. Whatever the color, they all taste good roasted.)
