A world of barbecued chicken

This is a story about barbecued chicken. Not the shop-bought version that is one of our favourite convenience foods but the homemade kind that, in so many corners of the globe, is a regular and delicious dinnertime offering.

Think yakitori in Japan, Thai satays and Vietnamese grilled chicken salads, Middle Eastern kebabs, and whole butterflied Portuguese chooks.

In Argentina, they call their barbecues asado and the Indians go for the tandoor.

The modern-day outdoor kitchen with its stainless steel rangehoods, pizza ovens, island grills and stone benchtops takes its inspiration from myriadcultures, all contributing their own flavours.

Oh, it's all making me hungry.

Let's begin our global barbecue journey in the Middle East, home of the shish kebab.
