Chefs Recipe Challenge: Chicken-Fried Steak

Dunham was challenged by fellow forager chef Jonathon Stranger of Ludivine to put his spin on a true Oklahoma favorite: chicken-fried steak.

Dunham, who oversees operations at the brand-new School of Culinary Arts at Francis Tuttle and is host of “Oklahoma Cooks,” which airs at 5:30 p.m. Saturday on KSBI-52, went to his roots for this challenge.

He is a native of New Braunfels, Texas, which is between Austin and San Antonio and in the heart of German influence in the Texas Hill Country. Along with smokehouses, Germans brought schnitzel to this country. And it doesn't take much investigation to realize chicken-fried steak is simply a logical evolution of schnitzel.

Dunham said he let himself get carried away with the recipe when he finally decided to look inward and use what he knew to create a restaurant-worthy version of chicken fried steak that can easily be made at home.
